As a mom of a toddler, I’m always running around the house, running out the door, or running around the yard. Gone are the days when I could sit around, relax, and binge watch my favorite Netflix original. Because I’m perpetually in hurry to get places, I sometimes forget to grab a snack. Easy Baked Onion Rings are a quick and simple snack to make when the craving for something crisp, crunchy, and sweet takes over. I like to eat them by themselves, but they’re also tasty as a side dish for soup or salad. They go great with my Easy Low-CalorieTomato Soup. Since they’re baked instead of fried they’re healthier but still feel indulgent and satisfying. Best of all, they’re one of those dishes that I almost always have the ingredients for on hand in my kitchen!

The month of February is commonly known for two things in this country. Valentine’s Day and the Super Bowl. Even if you’re not a football fan, you know the Super Bowl. You may not who is playing or what city the big game is in, but you know it’s happening.
I’ll admit, I’m not a football fan. Unless, of course, I’m Netflix binging on some Friday Night Lights!

Cinnamon Sugar Candied Nuts make tasty treats for Valentine’s Day or for any special occasion. They also make nice hostess gifts or party favors. They’re so simple to make that you can actually make them anytime at all—because they’re so delicious.
Any nut or combination of nuts will work for this simple recipe. I chose walnuts, pecans, and cashews but all nuts are tasty and healthy. Nuts are full of healthy fats, protein, fiber, and a wide range of nutrients like vitamin e, magnesium, and selenium. These Cinnamon Sugar Candied Nuts make healthy and filling snacks. They also smell so delicious—the last time I made them everyone who came into the house kept asking, “What smells so good? Is that Cinnamon?” These Cinnamon Sugar Candied Nuts were definitely a huge hit!

I’m always in search of a yummy treat that I can serve my toddler, he’ll taste it, and he’ll actually want a second bite of it. This raspberry orange roll is adapted from a cranberry orange recipe I came across while on the hunt for something new. This Raspberry Orange Bites recipe came about mostly because I didn’t have cranberries on hand so the Raspberry Orange Bite was born.

One of my favorite treats is this Berry and Greek Yogurt Dessert. I came up with it because I love strawberry shortcake and wanted a tasty lower calorie version. I started off by just mixing and eating pureed berries with Greek yogurt (which I also still enjoy). Adding the rest of the ingredients really give it that yummy berry shortcake-ish taste.
