Simply Fresh Broccoli Soup
As Florida winters go, it’s been a cold one this year, and the past few days have definitely been a bit chilly. When it’s cold outside I need the three S’s: sweaters, scarves, and soup. Of course, I usually need these things year round because even when it’s very hot outside, my house and office tend to have the air conditioner turned down so low that I’m always cold no matter what. 3 Easy Meat Rubs
Everything in my life requires simplicity, and meal prep and cooking are no exceptions! Simple rubs for meat, chicken, or fish are the perfect way to add flavor to your meals without a lot of fuss.
These rubs can be pre-mixed and stored in an airtight container for up to 2 to 3 months–preferably away from light and heat. Use about 2 Tablespoons per pound of meat, chicken, or fish. Pat on evenly. Put on at least 30 minutes prior to cooking or grilling.
Korean Style Spinach Salad
This is my all-time favorite salad! It can be served in the summer, spring, fall, or winter. I’m making it in honor of Father’s Day for my husband because I got this recipe from his late Mother many years ago. To be exact, it was 1983. She gave me the recipe so I could bring this dish to a family Fourth of July party. I still have (and use) the original piece of scrap paper that she wrote the recipe on.
