If you’ve read any of my other posts, you know that I’m a crock pot mom. My Crock-Pot is a kitchen essential and without it I’d probably be feeding my kid Kraft mac and cheese every day. Not that he would object because who doesn’t love Kraft mac and cheese! When I’m not feeling extra lazy, I shelf the Kraft and whip up some of this homemade mac and cheese with a bit of a twist. One of my new favorite go-to dinner recipes is this Taco Mac & Cheese Crock-Pot Meal. I substitute the beef with [Read more…]
I love easy crock pot meals that taste like you spent hours slaving over a hot stove cooking them. This Crock Pot Hamburger Casserole recipe is absolutely delicious and so simple to make.
My son loves ground beef and hates his veggies so I’m always trying to hide them in our meals whenever possible. I was a little skeptical making this because I’m always worried he’ll see green and immediately [Read more…]
I’m always on the lookout for a quick and easy dinner recipe. My wheelhouse is 5 ingredients or less! After working all day and taking care of a 2-year-old, I desperately need a quick and easy dinner recipe or odds are I’m not cooking.

Everything in my life requires simplicity, and meal prep and cooking are no exceptions! Simple rubs for meat, chicken, or fish are the perfect way to add flavor to your meals without a lot of fuss.
These rubs can be pre-mixed and stored in an airtight container for up to 2 to 3 months–preferably away from light and heat. Use about 2 Tablespoons per pound of meat, chicken, or fish. Pat on evenly. Put on at least 30 minutes prior to cooking or grilling.
This is my all-time favorite salad! It can be served in the summer, spring, fall, or winter. I’m making it in honor of Father’s Day for my husband because I got this recipe from his late Mother many years ago. To be exact, it was 1983. She gave me the recipe so I [Read more…]
Summer is the time of year for light, fresh, and tasty salads. They can be served at lunch or dinner. They can also be served as an easy stand alone meal or a yummy side dish at a summer holiday party or picnic. My whole family loves this Veggie and Feta Pasta Salad, especially my husband. We’ll definitely be mixing up a big bowl of it for Father’s Day. Why not make some for the special man in your life.
Pizza is, hands down, my favorite guilty indulgence. I love it! One of my favorite pizzas is called the Magical Mystery Tour made by Mellow Mushroom. It has a pesto base with Portobello and button mushrooms, topped with warm, gooey feta and mozzarella cheese, a touch of spinach, and just the right amount of jalapeños for a bit of spice. If calories weren’t a factor, [Read more…]
