
It’s 85° and officially Fall in Florida! I know what you’re thinking…85°?! But yes, as soon as the temperature drops below 90° we break out our favorite Fall recipes, and that includes this yummy Hamburger Soup.
Soup is always a favorite meal in the Fall and Winter for most people. Even for Floridians like me! There’s something about the feeling of good hearty food that warms your bones when it’s cold outside. That feeling of warmth spreads all over and immediate satisfaction through food is achieved.
This Hamburger Soup recipe is so delicious and can even be put together in a hurry on a weeknight. Save yourself even more time by prepping the chopped veggies the night before and adding all the seasonings to a small covered bowl ahead of time. If I know I’m going to be short on time in the evenings, but still want a warm soup for dinner, I prep the night before as much as possible and keep the rest of the ingredients on the counter ready to go.
Prepare Your Hamburger Soup
Sometimes when I know I’m going to make a meal that involves some chopping, I like to do it the night before. Especially on a weeknight. Weeknights are jam-packed with late work nights, homework, and after-school activities so eliminating some of the prep work the night before on a meal like this is key. So, get out those potatoes, celery, tomatoes, and onions and chop them all the night before if you know you’re going to be running short on time. Store them in the refrigerator until cooking time.
Making Your Hamburger Soup
In a large Dutch oven or stock pot, add olive oil and sauté onions and celery over medium heat until onions are translucent. Next, stir in ground beef and garlic until meat is thoroughly cooked. Drain if desired. Add tomato paste, diced tomatoes, broth, potatoes and seasonings. Salt & pepper to taste. Reduce heat and simmer for 20- 30 minutes.
You can serve warm and top with shredded cheese, sour cream, or hot sauce. Enjoy!

- 1 lb Ground Beef or Turkey
- 4 cups of Chicken or Beef Broth
- 3 cups of Diced baking potatoes or sweet potatoes
- 1 Tbsp Italian Seasoning
- 1/2 Tbsp. Garlic Powder
- 1/2 Tbsp. Onion Powder
- 1 can – 28oz- Diced tomatoes (undrained) or 4-5 roma tomatoes
- 1 oz can Tomato paste
- 3 cloves Minced garlic
- 2 cups Chopped celery
- 1/2 – 1 cup Chopped onion
- 1 Tbsp. Olive oil
Toppings:
- Shredded Cheese
- Sour Cream
- Hot Sauce
- Fresh Parsley
- Parmesan Cheese
- Salt & pepper to taste
