It’s 85° and officially Fall in Florida! I know what you’re thinking…85°?! But yes, as soon as the temperature drops below 90° we break out our favorite Fall recipes and that includes this yummy Hamburger Soup.
This Hamburger Soup recipe is so delicious and can even be put together in a hurry on a weeknight. Save yourself even more time by prepping the chopped veggies the night before and adding all the seasonings to a small covered bowl ahead of time. If I know I’m going to be short on time in the evenings, but still want a warm soup for dinner, I prep the night before as much as possible and keep the rest of the ingredients on the counter ready to go.

I’ve never made this in an Instant Pot but I’m sure you can easily adapt it instead of making it on the stovetop. Enjoy!
Ingredients:
- 1 lb Ground Beef or Turkey
- 4 cups of Chicken or Beef Broth
- 3 cups of Diced potatoes
- 1 Tbsp Italian Seasoning
- 1/2 Tbsp. Garlic Powder
- 1/2 Tbsp. Onion Powder
- 1 can – 28oz- Diced tomatoes (undrained)
- 1 oz can Tomato paste
- 3 cloves Minced garlic
- 2 cups Chopped celery
- 1/2 – 1 cup Chopped onion
- 1 Tbsp. Olive oil

- Shredded Cheese
- Sour Cream
- Hot Sauce
- Fresh Parsley
- Parmesan Cheese

Directions:
- In a large dutch oven or stock pot, add olive oil and sauté onions and celery over medium heat until onions are translucent.
- Stir in ground beef and garlic until meat is throughly cooked. Drain if desired.
- Add tomato paste, diced tomatoes, broth, potatoes and seasonings. Salt & pepper to taste.
- Reduce heat and simmer for 20- 30 minutes.
- Serve warm and top with shredded cheese, sour cream, or hot sauce.
