It’s almost the end of the strawberry season, which means I have to start stocking up on fresh strawberries while they’re cheap and tasty. Right now my local grocery store is selling a pound of strawberries for about $4. In about a month they’re going to go up $2-$3, and they’re not even going to taste as yummy! I was inspired by a recipe I found to make these Strawberry Chocolate Cheesecake Bites.

These Strawberry Chocolate Cheesecake Bites are super easy to make and don’t require much effort. You can whip up a batch after dinner for a sweet dessert the whole family will love or make a plate to bring to your next gathering. They’re absolutely delicious and semi guilt-free.

Just grab a pound of fresh strawberries, wash, and cut the tops off. Use a paring knife to hollow out the berry. Mix together cream cheese, powdered sugar, cocoa powder, and vanilla extract until it’s smooth. Fill each strawberry with the chocolate cheesecake whip, crush up some graham crackers, and then dip the berries in the graham crackers. Viola!
Strawberry Chocolate Cheesecake Bites Ingredients:
- Strawberries
- Cream cheese
- Powdered sugar
- Cocoa powder
- Vanilla extract
- Crushed graham crackers
Directions:
- Cut the tops off of the strawberries and hollow out the inside
- In a large mixing bowl, combine the cream cheese, powdered sugar, cocoa powder, and vanilla extract. Beat with an electric mixer until smooth.
- Let the mixture set in the refrigerator for 30 minutes.
- Fill each strawberry with the cheesecake mixture using a spoon. You can also fill a Ziplock bag with the mixture, cut the tip off, and squeeze into strawberries.
- Dip strawberries into crushed graham crackers. Store in a sealed container in the refrigerator.
