If you’re a busy mom like me and don’t have a lot of time for fancy cooking or recipes that have more than 10 ingredients, then you’re going to love this quick Greek Chicken Bowl that is both healthy and delicious.
I don’t know about you, but dinner menus are hard for me. I’m always on the hunt for quick and easy healthy dinners. My exact go to search request in Google or Pinterest when I’m planning the dinner menu for the week. I need to have my ideas in advance and everything on the grocery list so that I know I have everything I need. I am not good with spur of the moment dinners or just throwing something together with whatever is in the pantry and fridge. That kind of cooking is a true gift I wish I had.

Instead, with my planner pad and pen I carefully and thoughtfully designate each day a “quick & easy healthy meal.” My husband and I split the cooking duties and most weeks I am responsible for at least 3 meals. This Chicken Greek Bowl usually makes the rotation once a week or at least every other week.
My 6 year old even eats this dish- minus the tomatoes and olives of course! You’ll find that most of the ingredients are staples you probably already have on hand. One thing I don’t use that most greek bowls contain is red onions but feel free to add some if your stomach can take it! Don’t over do it because their potency can take over the simplest meal. Ingredients:
- Greek Seasoned Chicken
- Rice
- 2 cps. Chopped cucumbers
- 1 cp.Chopped tomatoes
- Feta
- Sliced kalamata olives
- 1 tbsp olive oil
- 2 tbsp white wine vinegar
- Cavender’s All Purpose Greek Seasoning
Greek Seasoning For Cucumber Salad or chicken rub:
- 1 tsp Garlic Powder
- 1 tsp. Onion powder
- 1/4 tsp Dill
- 1 tsp. Oregano
- Salt & pepper to taste
Directions:
- Brush chicken with olive oil and rub with Cavender’s Greek Seasoning. If you do not have any Cavender’s on hand, use the same greek seasoning that will be used on the cucumber salad. Heat up a large skillet and add 1 tbsp of olive oil. On medium heat, cook chicken for about 5 minutes on each side or until done. Remove and slice into strips.
- Combine chopped tomatoes, cucumbers, and olives in a mixing bowl with herbs, oil, and vinegar.
- Prepare rice according to box. Add a little Cavender’s Greek Seasoning to the rice.
- Top rice with cucumber mixture and feta cheese.
