Burrito bowls are one of our favorite go-to meals, especially on busy work and school nights where we don’t have a lot of time to cook. This Copycat Chipotle Burrito Bowl is the perfect family meal you can serve without all the hassle of cooking but still feel great about feeding your family a well rounded meal.
This Copycat Chipotle Burrito Bowl is an easy and healthy meal your whole family will love, but it still takes a little planning. If you’re using frozen chicken, prep by defrosting it the night before. You can even make the rice and chop the tomatoes to save time in the morning.
If you’ve got littles and you’re nervous about mixing everything together (like a normal person:), serve all the same food but keep it separate on their plate.
This Mexican inspired dish is so yummy, you’ll be adding it to the weekly round-up!

Slow Cooked Chicken:
-1 lb. chicken breast- serves 3-4 (double for larger families)
-1 cup of chunky salsa
-1 tbsp. Chili powder
-1/2 cup chicken broth
Bowl Toppings:
-Pulled Chicken
-Cilantro Rice
-15 oz. Black Beans (drained, rinsed and warmed)
-2 cups Shredded Lettuce
-Shredded Cheese
-Fresh salsa
-Chopped Cherry Tomatoes
-Sliced Avocado or Guacamole
-12oz. bag of Frozen Corn
-Sour Cream
-Briannas Cilantro Lime Dressing
-Lime wedges

Rice:
Follow the instructions on the box. When finished cooking, mix in about 1 tbsp of fresh chopped cilantro per cup of rice made, lime juice and salt.
Instructions:
- Add all slow cooker ingredients to slow cooker and cook for 8 hours on low.
- Shred chicken and let it sit in sauce for 5-10 minutes.
- Prepare rice and other desired toppings.
- Assemble bowl by adding rice, pulled chicken, corn, beans, lettuce, cheese, tomatoes, salsa, and avocado. Top with fresh lime, sour cream and Briannas Cilantro Lime Dressing.
