Easy Homemade Apple Cinnamon Pop-Tarts

Pastry Filling Ingredients
1 package pre-made pie crust
4 small Gala apples or 2 cups (peeled, cored, & diced)
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
1/8 tsp nutmeg
1/8 tsp pink sea salt
3/4 tsp flour
2 tsp sugar
1.5 tsp fresh lemon juice
Icing Ingredients
2/3 cup powdered sugar
2 tsp water
1 tsp vanilla extract
cinnamon (optional)
Tips & Variations
Shortcut option: I always use store-bought pie crust because who honestly has time to make dough from scratch! Store-bought saves you so much time.
Extra indulgent: Drizzle with caramel sauce or raspberry sauce.
Make ahead: These can be baked and frozen. Just pop them in the toaster-oven when ready to eat. They most likely will not hold up well in a standard toaster.

Instructions
Preheat oven to 400°F.
Remove the pre-made pie crust from the refrigerator to thaw or bring it to room temperature; this will make it easier to work with.
Wash apples. Prepare apples by using a 3-in-1 apple peeler, corer, and slicer. Dice apples as small as possible.
Add sugar, cinnamon, pumpkin pie spice, flour, salt, nutmeg, and lemon juice to apples. Mix to incorporate.

On a silicone mat, roll out the pie crust into a rectangle. If you can’t quite get into a rectangle shape, use a pizza cutter to cut off the edges and form a rectangle. Then cut into long sections.

Add the apple mixture to the bottom and then fold the top over to cover the apples. Gently press the dough together and then use a fork to pinch the crust together.
Place the Pop-Tarts on a cookie sheet and bake for 15-20 minutes or until the tops are golden.
While Pop-Tarts are baking, prepare the icing.
Whisk together powdered sugar, water, and vanilla extract until smooth.
Brush each pastry with icing once you remove the Pop-Tarts from the oven. Sprinkle with cinnamon if desired.

Allow Pop-Tarts to cool slightly and serve warm!
