Valentine’s Day is just around the corner and these Valentine’s Day Sandwich Cookies are the perfect handmade yummy gift for someone you love. Their familiar wafer flavor mixed with a little nut butter and sprinkles make them the yummiest snack for kids, partners, grandparents, friends, and neighbors!

My son recently said that he wanted to make cookies for his neighbor friend because he knows how much she loves cookies. So, I got to thinking with Valentine’s Day coming up, these adorable Valentine’s Day Sandwich Cookies would be perfect.

These Valentine’s Day Sandwich Cookies are so simple to make, they only have 3 ingredients!

And they’re a snap to make with kids, who might I add, lose interest real quick when baking is time-consuming.
What you need to make these Valentine’s Day Sandwich Cookies:
- Vanilla Wafer Cookies
- Nut Butter (peanut, almond, sunflower, or cookie butter)
- Valentines theme sprinkles or just regular rainbow sprinkles
Directions:
- Spread your favorite nut butter on one side of a vanilla wafer cookie.
- Top it off with a second vanilla wafer cookie and squish together just enough for some of the nut butter to come over the edges.
- Roll edges in sprinkles.
Tip: Use thicker nut butter if possible. If too creamy try adding some powdered sugar and peanut butter to a bowl and mix it up so it’s a thicker consistency.
