I’m always trying to find or come up with healthy, easy to make snacks. Preferably sweet and/or cinnamony ones! I love the taste and texture of chickpeas in salads or roasted plain with garlic salt, but I thought they’d taste good with a sweet, cinnamon flavor. After some experimenting, I came up with this recipe for sweet Roasted Cinnamon Chickpeas to satisfy both my cinnamon and my sweet tooth.

- Chickpeas
- Olive Oil
- Cinnamon
- Stevia
- Nutmeg
- Sea salt
- Parchment paper or tin foil

Ingredients
- 2 15 oz cans Chickpeas
- 1 Tbsp. Olive Oil
- 1 Tbsp. Cinnamon
- 1 Tbsp. Stevia
- 1/8 tsp. Nutmeg
- 1/8 tsp. Sea salt
- Parchment paper or tin foil
Instructions
- Drain and rinse chickpeas.
- Dry chickpeas on a plate for a minimum of 1 hour.
- Pat dry with paper towel. *Removing moisture makes for more crunchiness.
- In a small bowl, mix together Cinnamon, Stevia, Nutmeg, and Sea salt.
- Preheat oven to 400 Degrees.
- Line a baking sheet with parchment paper or tin foil.
- After allotted drying time, coat chickpeas with olive oil.
- Spread chickpeas on lined baking sheet.
- Bake approximately 35 to 45 minutes.
- Stir once or twice during baking.
- Let cool about five minutes.
- Put chickpeas in a medium size bowl, pour cinnamon mixture over them, coating well.
