Mini Apple Pie Cakes
What You Need:
1/4 tsp. Ground Cloves
1/4 tsp. Nutmeg
1/4 tsp. Salt
1/2 tsp. Apple Pie Spice
1 tsp. Cinnamon
1/2 cup Brown Sugar
10 Chopped Apples (Gala)
24 oz. Ginger Ale (2 cans)
2 Boxes of Spice Cake Mix
Walnuts (optional)
Caramel Sauce (optional)
Whipped Cream (optional)
Yields 24 Mini Apple Pie Cakes
Directions:
Preheat oven to 325. Use a 3-in-1 apple peeler, corer, and slicer to prep the apples. Chop them and add the spices.
Mix the cake mix and ginger ale. Do not add the ingredients on the back of the Spice cake mix- only add the ginger ale.
Add apples to a muffin tin, then top with the cake mix and bake for 28 minutes.
Let the cakes cool in the muffin tray. Once cooled, flip the mini apple pie cakes using a cutting board.

Top with caramel sauce and serve. These also pair great with vanilla ice cream and whipped cream!
Each Mini Apple Pie Cake starts with a soft, moist vanilla or spice cake base. The center is filled with a sweet apple pie mixture made from diced apples, brown sugar, and cinnamon — cooked just until tender. Top them with a drizzle of caramel sauce or a dollop of whipped cream for an extra-special touch.
