Simply Fresh Broccoli Soup
As Florida winters go, it’s been a cold one this year, and the past few days have definitely been a bit chilly. When it’s cold outside I need the three S’s: sweaters, scarves, and soup. Of course, I usually need these things year round because even when it’s very hot outside, my house and office tend to have the air conditioner turned down so low that I’m always cold no matter what. Easy Broccoli Soup is perfect whether it’s cold outside or just cold inside.
Low Fat Vegetarian Artichoke Chickpea Quesadilla
I came up with this quesadilla recipe one Saturday afternoon when I didn’t have a lot of food in the house and I didn’t want to go to grocery shopping until Sunday. When I found the artichoke hearts and chickpeas in the pantry (two of my favorite foods) I had a feeling I could come up with something tasty. Then I found the corn tortillas in the fridge and I knew that a delicious meal would soon be on my plate.
Reflections and Mindful Resolutions
The year 2016 is over, and let’s face it, it was not pretty. Everywhere I turned – Facebook and Twitter – they all were counting down the seconds until 2017, hoping that the New Year would be different.
While we might hope that a new year will bring a new us, we have to recognize that years are just marked days on a calendar. Nothing really changes in those final seconds, nothing instantly transforms us. We still have to make conscious decisions to move forward and change. Entering 2017 does not erase 2016. We still have to remember the choices we made to get to 2017.
Without getting political or anything, it’s time to recognize that the world is changing. It’s time to do our part of working with it or against it. Resolutions don’t have to be about getting fit or quitting smoking. They can be about making a difference in the world. Because whether you believe it or not – one person can make a difference, and when we work together we change the world.

Beachbody and Vegetarian Meal Prepping
Recently I decided to make a change in my life – to get healthy and get in shape. I’m 25 and realize I don’t take very good care of myself. I don’t eat right and don’t exercise. That needs to change. I decided to join Beachbody and start meal prepping.
A few weeks ago a friend of mine who’s a coach for the company Beachbody reached out to me. I’d recently quit my job (no more paid gym time) and just gotten engaged.
