Blueberry Oat Pancakes
I love pancakes so I’m always interested in new ways of making them. I’d heard of using rolled oats and applesauce as the main ingredients in pancakes instead of flour and eggs so I put them together with blueberries, my current favorite in-season fruit. These Blueberry Oat Pancakes are chunky, dense, and so delicious. They’re so good you can eat them hot or cold! [Read more…]

Salads are one of my favorite healthy lunch and dinner options, especially during the summer. I’ll take a bowl of fresh fruit or vegetables over a bed of kale and spinach with some homemade dressing every day of the week (except on pizza Friday)! If you’re into salads and freshly made dressing, check out my Spinach and Quinoa Salad.
Dark leafy greens are always the way to go when it comes to homemade salads. If you’re wondering what consists of dark leafy greens, I’m talking about spinach, kale, arugula, Swiss chard, collard greens, and romaine. Stay away from iceberg—there’s very little, [Read more…]

Chocolate Chip Dessert Hummus
If you’re a raw cookie dough lover, like me, then you will love this Chocolate Chip Dessert Hummus!
I have no shame in admitting my love of raw cookie dough. I’ve been known to eat an entire sheet of Nestle Tollhouse cookie squares—never actually baking them, as intended. Being that summer is right around the corner and so is beach season I thought I’d table my cookie dough obsession for the season and try out something a little more guilt-free. [Read more…]
Why I Buy Cruelty-Free
About a year ago I made the conscious decision to only buy cruelty-free makeup. I’ve mentioned it in other posts before, but I’ve never talked about why.
I have been a vegetarian for about 9 years so I’ve been pretty aware of animal cruelty for a while now. What really changed it for me though was my dog.

What better way to celebrate Valentine’s Day than to be your own Valentine?
The Hallmark holiday might be well known for its emphasis on coupledom but that doesn’t mean you can’t spread the love to everyone – especially yourself. Whatever you might be planning – a night out with the other half, friends, or even a night in with the kids – you can still treat or [Read more…]
Top 5 Favorite e.l.f. Products
e.l.f. stands for Eyes Lips and Face. This brand is one of my all-time favorite makeup brands because it’s vegan (mostly), doesn’t test on animals, cheap, and is great quality. Usually, that’s a very hard combination to find.
I’ve been using e.l.f. products for years and they just keep getting better in quality and selection. They’re always coming out with something new and expanding their collections. Below I’ve listed my top 5 favorite e.l.f. products, some that I’ve been using for years and others only more recently.

Beachbody and Vegetarian Meal Prepping
Recently I decided to make a change in my life – to get healthy and get in shape. I’m 25 and realize I don’t take very good care of myself. I don’t eat right and don’t exercise. That needs to change. I decided to join Beachbody and start meal prepping.
A few weeks ago a friend of mine who’s a coach for the company Beachbody reached out to me. I’d recently quit my job (no more paid gym time) and just gotten engaged. Frankly, she got me at a vulnerable time. In the past, when she would ask, I would say I didn’t have the time or energy to commit. Now it’s a different story.
