I know I’m a little late to the Keto diet train but my husband has been going strong on Keto for the past 2 years so I finally decided to give it a shot! Another one of the top reasons is that it’s been a little difficult having 3 different diets in one household. When I say diets, I mean that there are3 different people—my husband, my 3 year-old son, and myself and we all eat very different types of foods.
Anyway, I’ve always had the type of body that I could eat what I wanted (within reason) and not worry about my weight. Until I had my son. My body changed…a lot! I gained 40 pounds (started at 104 lbs.) during my pregnancy and when I gave birth I didn’t loose the 40 pounds as quickly as I would have liked.

Surprise, surprise—right? I know this is a common issue for a lot of new moms and I’m probably not telling you anything new. BUT, I feel like I’ve finally come to the realization that only working out 3 times a week isn’t going to cut it. If I really want to see a change in my body and in the way I feel about my body, I need to start eating a little healthier. That means cutting out the snacking I do when I’m bored, cutting the sugar cravings I get after meals, and eating more veggies. Seems easy right? Maybe not easy but obtainable with some more effort and self-control.
These Keto Pizza Zucchini Boats have been one of new favorites, especially since I’ve had to cut out pizza Fridays…ugh!! There’s very little carbs and added sugar in this recipe– only in the tomato paste and marinara sauce will you find them. It is important to spring for the more expensive Raos Marinara sauce if you’re serious about keeping it low carb!

Keto Pizza Zucchini Boats Ingredients:
- 1 lb. ground beef or turkey
- 6 oz can of tomato paste
- 1/4 cup of water
- 1 Jar marinara sauce (Rao’s Homemade Marinara has lowest amount of carbs)
- 2 Large Zucchini
- Olive oil
- Salt & Pepper
- 2 tsp. Onion powder
- 2 tsp. Garlic powder
- 1 tbsp. Italian seasoning
- 1 tbsp. Oregano
- 2 cups mozzarella cheese
- Pepperoni
- Fresh basil (optional)
Keto Pizza Zucchini Boats Directions:
- Preheat oven to 400° F
- Cook ground beef and season with dry ingredients. Mix in water. Set aside.
- Cut 2 large zucchini in half. Pat dry with a paper towel and then scoop out the middle.
- Spray or brush olive oil on the inside of zucchini and then salt and pepper to taste for extra seasoning.
- Brush about 2-3 tbsp. of Rao’s marinara sauce into the middle of the zucchini boats.
- Next, spoon the meat mixture into the zucchini boats and pour mariner sauce over mixture.
- Sprinkle with cheese and top with pepperoni.
- Heat in oven for 15-20 minutes or until zucchini is tender. Cook less if you like your zucchini a bit harder. Then top with fresh basil if you have it.

I’ve never been on any sort of “diet” plan before, mostly because I love food and sweets and could never really see myself cutting sugar and carbs from my daily life. But, with the help of my husband who has been great about helping me meal prep for breakfast and lunch I feel like this something I can do.
Side note–I don’t intend to try and change the way my 3 year-old eats. He’s a carbatarian if I’ve ever seen one. But when my husband and I are on the same page about our eating habits, dinners and meal prep are so much easier. Also, for my 3 year-old, I just scooped out the filling and told him he was eating pizza casserole for dinner and he loved it!

*My Keto Pizza Zucchini Boats came out a bit dark because I cooked them on a lower heat while I took my son to the park. I don’t recommend doing this because the boats didn’t cook all that well and I ended up having to turn up the heat when I got home and then cook them even longer.
