Baked zucchini is a great side dish with just about any meal. We like to eat it with chicken, turkey burgers, and even just as a snack by itself. One of my favorite and more go-to ways to serve roasted zucchini is tossed in olive oil, with a little parmesan cheese and Italian seasoning.
